Vegan Orange Vanilla Muffins

Ingredients

  • 2 cups all-purpose flour
  • ½ cup organic cane sugar
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • cups pulp-free orange juice
  • 2 teaspoons vanilla extract

Instructions

  • Preheat the oven to 350°F. Place liners in a muffin pan. 
  • To a large bowl, add the flour, sugar, baking powder, baking soda, and salt. Stir to combine.
  • In a medium bowl, combine the orange juice and vanilla extract.
  • Pour the liquid ingredients into the bowl of the dry ingredients. Stir until just combined.
  • Spoon the mixture into the muffin liners, filling them just above halfway.
  • Bake for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Let the muffins rest in the tray on a cooling rack for at least 10 minutes. Then, carefully remove them from the tray and allow them to continue to cool on the rack until they are a comfortable temperature to eat. Enjoy!

Notes

  • Store vegan orange muffins in a sealed container at room temperature for up to 2 days, then transfer the container to the fridge for up to 3 more days. 
  • Freeze for up to 2 months.
