These vegan orange vanilla muffins are fluffy, citrusy, and inspired by the color and era of the moment. Easy, citrusy, dairy-free, and perfect for breakfast, snacking, or dessert!
Preheat the oven to 350°F. Place liners in a muffin pan.
To a large bowl, add the flour, sugar, baking powder, baking soda, and salt. Stir to combine.
In a medium bowl, combine the orange juice and vanilla extract.
Pour the liquid ingredients into the bowl of the dry ingredients. Stir until just combined.
Spoon the mixture into the muffin liners, filling them just above halfway.
Bake for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Let the muffins rest in the tray on a cooling rack for at least 10 minutes. Then, carefully remove them from the tray and allow them to continue to cool on the rack until they are a comfortable temperature to eat. Enjoy!
