These mint chocolate blended overnight oats are smooth, creamy, and pudding-like—perfect for anyone who doesn’t love the texture of traditional overnight oats. Rich chocolate with a hint of peppermint gives these surprisingly healthy overnight oats serious peppermint patty vibes. They’re a refreshing and easy make-ahead breakfast you’ll look forward to all week.

Ingredients

Overnight Oats

  • cups unsweetened almond milk (or other unsweetened nondairy milk)
  • 1 cup old-fashioned (rolled) oats
  • tablespoons unsweetened cocoa powder
  • 1 to 2 Medjool dates pitted and roughly chopped (I prefer 2, but start with 1 if you’re especially mindful of sugar intake)
  • 1 tablespoon chia seeds
  • 1 tablespoon ground flaxseed
  • 1 teaspoon vanilla extract
  • 2 to 3 drops peppermint extract (note: peppermint extract has a very strong flavor—start with just 2 drops and taste; that may be enough)

Optional Toppings

  • banana slices
  • mint leaves
  • vegan yogurt
  • nondairy chocolate chips
  • cacao nibs

Instructions

  • Add ingredients: Add all ingredients to a high-speed blender.
  • Blend: Blend until smooth and creamy. Taste and adjust sweetness or peppermint level if needed.
  • Chill: Pour into a medium bowl or individual serving containers. Cover and refrigerate overnight or for at least 6 hours.
  • Serve: In the morning, serve plain or garnished with your favorite toppings, such as banana slices, fresh mint, vegan yogurt, chocolate chips, and/or cacao nibs.

Notes

  • Use peppermint extract (found in the baking or spice section of most grocery stores), not peppermint oil or peppermint essential oil. Only peppermint extract is designed for food consumption.
  • Any unsweetened plant-based milk may be substituted for the almond milk. 
  • 1 to 2 tablespoons of maple syrup may be substituted for the Medjool dates.
  • Mint chocolate blended overnight oats will keep well in the fridge for about 4 days. I don’t recommend freezing, as the texture may change.
