Sometimes, you just want a piece of cake.  Nothing fancy, no gooey sugary frosting, just a good hunk of cake. When that’s what you’re in the mood for, this concoction fits the bill. I like to eat healthy, but I also don’t want to live in a world without cake.

Moist, orangey goodness…that’s what I’m talkin’ about!

Orange You Glad There’s Cake


  • 1.5 cups white pastry flour 
  • 3/4 cup sugar
  • 1/4 cup brown sugar (not packed)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • zest of 1 orange
  • 1 cup orange juice
  • 1/3 cup oil (I used fruity olive oil)
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla

Preheat oven to 350°F.  Lightly grease a 9 inch cake pan. I lined my pan with oiled parchment paper. 

In a large bowl, thoroughly mix the flour, sugars, baking soda, salt, and orange zest. 

In a large measuring cup (or separate bowl) stir together the orange juice, oil, vinegar, and vanilla. Combine the wet ingredients with the dry and mix thoroughly.

Pour batter into the pan and bake for 30 to 35 minutes, or until a knife or toothpick comes out clean

You can also make this with whole wheat pastry flour, but that will give it a crumblier texture.  If you want extra sweetness, try an orange glaze or a little powdered sugar – nothing too heavy.
