With my husband recovering from his recent hospital stay, I really want to provide him with some nutrient dense treats.  Enter today’s creation: a green smoothie I have dubbed “Strawberry Kale Forever.”

Strawberry Kale Forever

Ingredients and Preparation:

Throw these ingredients in your blender and blend until smooth (I use a VitaMix):

  • 4-5 large kale leaves
  • 2 large chard leaves
  • 1/2 bunch spinach
  • 1-inch of peeled ginger
  • 1/2 green (tart) apple, peeled
  • 1/4 meyer lemon, peeled
  • 4 large strawberries
  • 1 cup unfiltered apple juice
  • 1 cup ice (optional)

I include the ice because my VitaMix can heat things up a bit.  If your blender doesn’t, you might wish to omit it.  You don’t have to use meyer lemons either, but they’re a delicious cross between a lemon and an orange, which I think adds a distinct flavor. Lemon rind is edible, but can add a slightly bitter flavor – you might like it, but I was looking for something sweeter.

When my husband and I did a 60-day juice fast, we drank a lot of green juices.  When using a juicer, kale, spinach and chard don’t result in a lot of liquid, but you cannot beat the nutrients they provide.
