The holidays are a time to indulge.  And what better way to indulge than with luscious chocolate cake?  I’ll admit it – this cake is so good, my husband and I had it for breakfast this morning.  Sinful I know…but once you make it, you’ll understand why.
What could make delicious chocolate cake even better?  What if I told you this recipe takes just a few minutes, uses no special ingredients and goes together in only one pan?  Sounds too good to be true, but it is.

Simple Vegan Chocolate Cake
Ingredients:
  • 1 1/2 cups whole wheat pastry flour
  • 1/3 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1 cup sugar
  • 1/2 cup olive oil
  • 1 cup cold water
  • 2 tsp vanilla extract
  • 2 tbsp cider vinegar
Preparation:
Preheat your oven to 375 degrees.
In an ungreased, baking pan (8″ square or 9″ round), sift together the flour, cocoa, baking soda, salt and sugar.
In a 2 cup measuring cup, measure and mix the oil, water and vanilla.
Pour the liquid ingredients into the baking pan and mix the batter with a fork until smooth.
Once smooth, add the vinegar all at once and quickly stir it in.  You will see light-colored streaks in the batter as the vinegar reacts with the baking soda. Stir until the vinegar is evenly distributed in the batter.
Bake for 25-30 minutes. 
Optional: Glaze
  • 1/2 cup maple syrup
  • 1/2 cup cocoa powder
  • 1/4 cup water
  • 1/4 tsp cider vinegar
  • 1/8 tsp salt
  • 2 tsp sugar
  • 2 tsp vanilla

In a small saucepan, place the maple syrup, and bring to a boil. Reduce the heat to low, whisk in the cocoa powder, water, vinegar, sugar and salt, and cook an additional 3 minutes. Remove saucepan from the heat and whisk in the vanilla. Allow to cool slightly. Drizzle over the cooled cake.
