I like to make a big batch of soup or a stew each weekend.  I’ll have it for dinner on Sunday and for lunches and/or snacks throughout my week.  Three weeks ago it was Coconut-Curry soup (my own recipe which I will share sometime soon), last week was Ratatouille and this week I decided to make the Garlic and Greens Soup from Colleen Patrick-Goudreau’s “The 30-Day Vegan Challenge.”  The recipe calls for an entire head of garlic, which I didn’t have in the house, so I used the 6 cloves I did have and added a bit of curry powder to spice things up.  Overall, a satisfying, tasty soup with very little fat.

I would encourage anyone interested in or already eating a plant-based diet to purchase “The 30-Day Vegan Challenge.” It’s filled with terrific information, helpful tips and easy recipes.  It transcends the realm of cookbook, providing a valuable reference you will look to again and again.
